The Violets 2017
Wine from Paraje de Valverde.
Variety: Garnacha 100%.
Zone: wine singular place old vineyards of Cebreros-Sierra de Gredos.
Type of wine: aged red wine.
Vineyard: vineyards at 900-920 m above sea level, very poor soil, sandy granite, with little water retention, plants in glass.
Vinification: Spontaneous alcoholic fermentation, in concrete tanks, 15% whole bunch, with temperatures between 18-26 ºC. Once finished, it was uncovered in stainless steel and then transferred to a 100 hl tub of Slovenian wood (Mastro Bottaio cooperage) where the wine rests for 14 months and undergoes malolactic. In November the wine is racked and filtered only once.
Tasting note: Cherry color with a very bright and clean medium-low layer. The floral notes stand out, its Mediterranean character with a spicy nose and a muscular and intense mouth, a delicate and elegant sensation that promises a very good evolution in the bottle.
Operating temperature: 12-14 ° C.
